Protein Omelette

1tbsp butter
3 egg whites
1tbsp water
Dash of pepper
Dash of minced garlic
Whole black beans
White corn
Tuna
Parsley










1) add egg whites, garlic, pepper, parsley, water to both and whip with a wisk
2) melt butter in small saute pan (8in?) add egg mixture - just below med heat
3) sprinkle tuna, beans and corn onto 1/2 egg by hand
4) cook until egg has firmed around edges-center egg still a bit runny
5) fold egg over side with tuna, etc-cook about a min
6) flip and cook another min
7) flip onto plate, top with fresh diced tomato and sprinkle with parsley
